What to call this??? How about.......Egg Pizza

Ok.....so it's not secret that I'm a Food Network junkie, I'll admit it. So I've watched a ton of food shows and seen a pizza with an egg on top a ton of times. Well Saturday mid afternoon Tattoo Man and I had just gotten home from a long morning of yard saling and we were starving. You know when you just go back and forth from the frig to the freezer to the pantry and nothing is jumping out at you?? Well this is what happened to me that day.

Well then I opened the freezer for like the tenth time and I notice the whole wheat pita just sitting there staring at me. So I'm thinking.....ok....pita....now what?? And different things go through my mind...hummus.....egg salad....tuna....pizza....hey back the truck up....PIZZA!!! But I didn't have any sauce.....so I'm thinking some more and I had a flash back of Triple D where they put an egg on the pizza and I thought....eeeehhhh.....lets give it a whirl.

So I threw together this little number and I ate it again today cuz I love it sooooo much!! I hope you give it a try because it really is delicious!!

1 whole wheat Pita bread
4 slices of fresh tomato
1/4 cup grated mozzarella cheese
1 tsp grated Parmesan cheese
1 egg
pinch of season salt
pinch of italian seasoning

Preheat oven to 350. Place pita on baking sheet. Next place tomatoes and then cover the whole pita with mozzarella cheese. Now crack egg carefully in the center of pizza. Sprinkle with remaining ingredients. Bake for 10-15 minutes depending on how done you like your egg. I like mine with the yoke still runny. These are very tasty!!

Zucchini Pizza.......who needs crust when you can use zucchini!!!!!

I <3 pizza.....but living a healthier eating lifestyle....pizza isn't exactly on the menu. But did I mention I LOVE PIZZA????? So I got to thinking.......how can I have pizza without having pizza??? I already have the most amazing wonderful delicious recipe for marinara sauce. Then I thought what could be my crust substitution?? Well, I was looking through the frig and I had bought the Trader Joe's giant pack of organic zucchini......there's like 50 pieces of zucchini in there. (Ok maybe I slightly over exaggerated) Seriously there is probably like 10 pieces.

That's when I got the idea to use it for the base of my pizza. Um.....I think it's kinda genius!! Ok Ok.....so I'm sure I'm not the first person to think of it......but if Ive never seen it then it doesn't exist.........right???? That's what I thought!!

5 good sized zucchini's, washed
1 cup marinara sauce, jarred or homemade
1 cup shredded mozzarella
pepperoni, salami, sausage, mushrooms, olives or any other topping you like

Preheat oven to 450. Cut off ends of zucchini and slice long ways into 4 pieces. Place on baking sheet. Drizzle with olive oil, salt and pepper to taste. Lay flat on pan. Spoon about 1 T of sauce over each zucchini until entire slice is covered. Sprinkle with approx 1-2 T of mozzarella. Top with any toppings you like or none at all. I had salami so I used that. Bake for 15-20 minutes, until brown and bubbly!! Serve, but be careful not to burn your tongue.

Pizza for dessert...........Um......yes!!!!

 


Sugar cookies + marshmallow fluff and cream cheese + strawberries and chocolate = A good thing!!
 
 
 
 
 
 
 
 
 
 
 
Sugar cookie dough (packaged, refrigerated or homemade if you have like a zillion years to wait for a delicious dessert!!)
1/2 pkg cream cheese
equal amount marshmallow fluff
approx 15 strawberries sliced in half
1/2 cup milk chocolate, white chocolate or semi sweet chocolate chips....or all three or a combo of 2....whatever floats your boat!!
Now....spread cookie dough out on cookie sheet to form as close to a circle as possible. Or whatever shape you want....heck if you feel like shaping like your dog Spot...go for it!! Bake according to package directions....well kinda....I had to bake mine longer cause it was like a giant cookie. While that is baking, mix marshmallow fluff and cream cheese in a separate bowl. Now cut the green leafy thingy off the strawberry and cut it in half. (After you wash them of course!!) By this time your ginormous master piece of a cookie should be done. Let it cool for a couple of minutes......if you can stand the wait!!
Spread the fluff mixture over the entire surface of the cookie, strategically place strawberries forming a circle, being careful to measure with a ruler........NO WAY....JUST KIDDING....just put the strawberries on the cookie!! If your feeling adventurous form a pattern!! Lastly stick the chocolate chips in a ziploc baggie in the micro for like 30 seconds. Take bag out of micro and massage it to mix chocolate. Snip a small corner off the bag and drizzle chocolate all over cookie and strawberries.
Cut using a pizza cutter and serve. Now enjoy the silence while the kids are quietly eating!!


I cant even tell you how good this was!! Big hit with the kids!! They think I'm some sort of super mom.....but it's only cause they don't know how easy it was!! ;o)
